Ingredients:
– 1 cup ricotta cheese
– 1/2 cup powdered sugar
– 1 lemon (zest and juice)
– 1/2 teaspoon vanilla extract
– 1 cup heavy cream
– 12 cannoli shells
– 1/4 teaspoon salt
– 1/4 cup lemon curd
– 1/2 cup mini marshmallows (optional)
– Fresh mint leaves for garnish

Instructions:
1. In a medium bowl, combine the ricotta cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract. Mix until smooth and creamy.
