Zesty Cowboy Butter Chicken Linguine

 

Ingredients:
– 8 oz linguine
– 1 teaspoon smoked paprika
– 2 tablespoons olive oil
– 1 pound chicken breast, diced
– 1/4 cup unsalted butter
– 3 cloves garlic, minced
– 1/2 teaspoon cayenne pepper
– 1 tablespoon lemon juice
– Salt and pepper to taste
– 1/4 cup fresh parsley, chopped
– 1 cup cherry tomatoes, halved
– 1/4 cup grated Parmesan cheese

Instructions:
1. Start by boiling a large pot of salted water over medium-high heat. Add the linguine and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the rest.

2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, seasoning it with salt, pepper, and smoked paprika. Cook for about 5-7 minutes until the chicken is golden brown and completely cooked through.

3. Add the garlic to the skillet and sauté for an additional minute until fragrant. Then, toss in the cherry tomatoes, allowing them to soften for about 2-3 minutes.

4. Lower the heat and stir in the butter, cayenne pepper, and lemon juice. Let the ingredients meld together, creating a zesty sauce.

5. Combine the cooked linguine with the chicken mixture in the skillet, tossing gently to coat. If the dish seems dry, add a bit of the reserved pasta water until you reach your desired consistency.

6. Top with fresh parsley and grated Parmesan cheese before serving.
