Ingredients:

2 ribeye steaks (about 1 inch thick)
2 tbsp olive oil
4 cloves garlic, smashed
2 tbsp unsalted butter

2 large onions, thinly sliced
2 tbsp olive oil or butter
1 tsp sugar (optional for caramelization)

For the Fries:
4 medium russet potatoes, cut into fries or wedges
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
For the Fries:
Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prepare the Fries: Toss the potato fries with olive oil, garlic powder, paprika, salt, and pepper. Spread them in a single layer on the prepared baking sheet.
Bake the Fries: Bake for 25-30 minutes, flipping halfway through, until the fries are golden and crispy. Garnish with fresh parsley if desired.
For the Sautéed Onions:
Cook the Onions: In a large skillet over medium heat, heat the olive oil or butter. Add the sliced onions and cook for 15-20 minutes, stirring occasionally, until the onions are soft and golden brown. If using, add the sugar halfway through to help caramelize the onions. Season with salt and pepper.
For the Ribeye Steak:
Season the Steaks: Pat the ribeye steaks dry with paper towels and season generously with salt and pepper on both sides.
Sear the Steaks: Heat olive oil in a large skillet or cast iron pan over high heat. Add the steaks and sear for 3-4 minutes per side for medium-rare (or adjust the cooking time for your desired doneness).
Baste with Butter: During the last minute of cooking, reduce the heat to medium and add the smashed garlic, butter, and fresh rosemary or thyme (if using). Tilt the skillet and use a spoon to baste the steaks with the melted butter for added flavor.
Rest the Steaks: Remove the steaks from the skillet and let them rest for 5-7 minutes before slicing.

Plate the Dish: Serve the perfectly seared ribeye steaks with the sautéed onions on top, alongside the crispy fries.
