Vibrant Roasted Beet & Goat Cheese Log

 

Ingredients:
– Goat cheese, softened
– Walnuts, toasted and chopped
– Fresh herbs (like parsley or chives), chopped
– Roasted beets, peeled and diced
– Honey
– Lemon juice
– Salt and pepper
– Crackers or crostini (for serving)

Instructions:
1. Preheat your oven to 400°F (200°C). While it heats, wrap your beets in foil and roast them for about 45-60 minutes until tender.

2. Once the beets are cool enough to handle, peel off the skins and dice them into small cubes.

3. In a bowl, combine the softened goat cheese, honey, lemon juice, salt, and pepper. Blend until smooth and creamy.

4. Gently fold in the diced roasted beets, ensuring they’re evenly distributed throughout the cheese mixture.

5. Lay a piece of parchment paper or plastic wrap on a flat surface. Spoon the beet and goat cheese mixture onto the paper and shape it into a log. Wrap the paper tightly around it and refrigerate for at least 1 hour to firm up.
