Tropical Fruit Cheesecake

 

Ingredients:
Crust:
-1 1/2 cups vanilla wafer crumbs πŸͺ
-2 tablespoons melted butter 🧈

Filling:
-1 (20 oz.) can crushed pineapple, drained 🍍
-3/4 cup sugar 🍬
-1/2 cup cold water πŸ’§
-2 packets unflavored gelatin ✨
-1 (8 oz.) block cream cheese, cubed πŸ§€
-1 1/2 cups halved seedless grapes πŸ‡
-1 (11 oz.) can mandarin orange slices, halved 🍊
-1 (10 oz.) jar maraschino cherries, chopped πŸ’
-1/2 cup finely chopped pecans 🌰
-2 cups whipped topping 🍦

Instructions:
-Make the Crust: Mix the vanilla wafer crumbs and melted butter. Press into a springform pan and set aside.
-Prepare the Filling: Simmer pineapple with sugar. Add gelatin dissolved in cold water and stir until combined. Add cream cheese, stirring until melted and smooth. Cool slightly.
-Stir in the fruits and pecans, then fold in whipped topping.
-Refrigerate: Pour the filling over the crust and chill overnight.
-Finish and Enjoy: Remove the cheesecake from the pan and serve chilled.
