Sweet and Chewy Marshmallow Caramel Corn

Ingredients:
– 1 cup unpopped popcorn kernels
– 1 cup sugar
– 1/2 cup unsalted butter
– 1 cup mini marshmallows
– 1/2 cup corn syrup
– 1/4 teaspoon salt
– 1 teaspoon vanilla extract

Instructions:
1. Pop the popcorn kernels using your preferred method. Make sure to discard any unpopped kernels and place the popped popcorn in a large mixing bowl.

2. In a medium saucepan over medium heat, combine the butter, sugar, corn syrup, vanilla extract, and salt. Stir continuously until the mixture comes to a gentle boil.

3. Allow the mixture to boil without stirring for about 4-5 minutes, or until it reaches a golden caramel color. Be careful not to burn it!

4. Once the caramel is ready, immediately remove it from heat and fold in the mini marshmallows until they melt and the mixture is smooth.

5. Pour the warm caramel marshmallow mixture over the popcorn and stir quickly to coat every kernel evenly.

6. Spread the coated popcorn on a parchment-lined baking sheet and allow it to cool for about 30 minutes. Break into pieces and enjoy!
