Steak Burrito

Ingredients (Makes 4 burritos)
For the Steak:
1 lb (450 g) skirt steak or flank steak
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
For the Burrito Filling:
4 large flour tortillas
1 cup cooked white or brown rice
1 cup black beans (canned, rinsed, and drained)
1 cup shredded cheddar or Monterey Jack cheese
1 cup diced tomatoes 🍅
1/2 cup diced red onion
1/2 cup chopped cilantro 🌿
1 avocado, sliced 🥑
1/4 cup sour cream
1/4 cup salsa or hot sauce
Instructions
Prepare the Steak:

In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
Rub the spice mixture all over the steak.
Heat olive oil in a skillet over medium-high heat. Cook the steak for 4–5 minutes per side or until your desired doneness.
Remove from the skillet and let it rest for 5 minutes before slicing thinly against the grain.
Warm the Tortillas:

Heat the tortillas in a dry skillet or microwave for 10–15 seconds to make them pliable.
Assemble the Burritos:

Lay a tortilla flat on a clean surface. Add a layer of rice, black beans, sliced steak, shredded cheese, tomatoes, red onion, and cilantro.
Top with avocado slices, sour cream, and salsa or hot sauce.
Wrap the Burritos:

Fold the sides of the tortilla inward, then roll tightly from the bottom up to form a burrito. Repeat with the remaining tortillas.
Optional – Toast the Burritos:

Heat a clean skillet over medium heat and toast each burrito seam-side down for 1–2 minutes, until golden and crispy. Flip and toast the other side.
Serve:

Slice the burritos in half and serve with extra salsa, guacamole, or a side of tortilla chips.
