Spinach & Egg Stir-Fry Delight

 

Ingredients:
– 4 large eggs
– 3 cups fresh spinach
– 1 tablespoon soy sauce
– 2 cloves garlic, minced
– 1 teaspoon sesame oil
– 1 small onion, diced
– Salt and pepper to taste
– Optional: sliced green onions for garnish

Instructions:
1. Heat sesame oil in a large skillet over medium heat.
2. Add diced onion and sauté until translucent, about 3-4 minutes.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Add the fresh spinach to the skillet and stir-fry it until wilted, which should take about 2 minutes.
5. In a bowl, whisk the eggs with soy sauce, salt, and pepper until combined.
6. Pour the egg mixture into the skillet with the spinach and onions. Gently stir and cook until the eggs are just set, around 3-5 minutes.
7. Remove from heat and serve hot, garnished with sliced green onions if desired.
