Spicy Harissa Roasted Cauliflower Steaks

 

Ingredients
For the Cauliflower Steaks:

1 large head of cauliflower
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste
For the Harissa Glaze:

2 tablespoons harissa paste 🌶️
1 tablespoon olive oil
1 tablespoon honey (or maple syrup for a vegan option) 🍯
1 teaspoon lemon juice 🍋
For Garnishing:

Fresh parsley, chopped 🌿
Pomegranate seeds (optional) ❤️
Lemon wedges 🍋
Directions
1. Prepare the Cauliflower:

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Remove the leaves from the cauliflower and cut it into thick slices (about 3/4-inch) to create “steaks.” Reserve smaller florets for another use.
2. Season the Cauliflower:

Brush both sides of the cauliflower steaks with olive oil.
Season with smoked paprika, garlic powder, salt, and black pepper.
3. Roast the Cauliflower:

Place the cauliflower steaks on the prepared baking sheet.
Roast for 20 minutes, flipping halfway through, until golden and tender.
4. Make the Harissa Glaze:

In a small bowl, whisk together harissa paste, olive oil, honey, and lemon juice.
5. Glaze and Roast Again:

Remove the cauliflower from the oven and brush one side generously with the harissa glaze.
Return to the oven and roast for an additional 5–7 minutes until the glaze caramelizes slightly.
6. Serve:

Transfer the cauliflower steaks to a serving platter.
Garnish with chopped parsley, pomegranate seeds, and lemon wedges.
Tips for Success:
Use mild or hot harissa paste depending on your spice preference.
Pair with couscous, quinoa, or a fresh green salad for a complete meal.
For extra texture, sprinkle with toasted almonds or pine nuts.
