Smoked Gouda and Bacon-Stuffed Burgers

Ingredients
For the Burger Patties
Ground beef : 2 lbs (80/20 for the best flavor)
Salt and black pepper : To taste
Smoked Gouda cheese : 1 cup, diced
Cooked bacon : 4 slices, crumbled
For the Toppings
Caramelized onions : 1 cup (optional)
Lettuce : 4 leaves
Tomato slices : 4 (optional)
Burger buns : 4, toasted
For the Sauce
Mayonnaise : 1/4 cup
Ketchup : 2 tbsp
Dijon mustard : 1 tsp
Pickle juice : 1 tsp
Step-by-Step Instructions
Prepare the Burger Patties
In a bowl, season ground beef with salt and pepper
. Divide into 8 equal portions.
Flatten each portion into a thin patty.
Place a spoonful of diced Gouda and crumbled bacon
in the center of 4 patties.
Top with the remaining patties and pinch the edges to seal tightly.
Cook the Burgers
Preheat a grill or skillet over medium-high heat.
Cook the burgers for 4-5 minutes per side, or until desired doneness is reached and the cheese inside is melted.
Prepare the Sauce
In a small bowl, mix mayonnaise , ketchup

Assemble the Burgers
Spread the sauce on the bottom half of each toasted bun .
