Slow Cooker Roast Recipe

Ingredients :
3-4 lbs chuck roast (or your choice of roast beef)
2 tablespoons of the olive oil
1 chopped onion
4 minced garlic cloves
2 cups of beef broth
1 cup of red wine (optional, substitute with more broth)
2 tablespoons of tomato paste
1 can of diced tomatoes (14 oz)
3-4 chopped carrots
2 stalks of celery, chopped
1 teaspoon of dried thyme
2 teaspoons of dried rosemary
Salt and pepper to taste
Fresh parsley for garnish
Steps to make a pot roast:
Sear the Bœuf :

Paste the dry roast beef and season generously with salt and pepper.
Heat the olive oil in a skillet over medium-high heat. Saute the roast for 3-4 minutes on each side until brown.
Prepare the base:

In the same pan, sauté the onions and garlic until tender. Stir in tomato paste and cook for 1 minute.
Defrost with red wine (if using) and simmer for 3 minutes.
Combine the ingredients in the slow cooker:

Place the pot roast in the slow cooker. Add the diced tomatoes, beef broth, carrots, celery, thyme and rosemary. Pour the wine mixture over it.
Cook low and slow:

Cover and cook on LOW for 8 hours (or HIGH for 4-5 hours) until beef is fork tender.
Chess and Serve:

Remove the roast and shred it to shreds. Put it back in the slow cooker to soak up the juices.
Garnish with fresh parsley before serving.
Optional: Serve with creamy mashed potatoes, rice or crispy bread! 🍞

Tips:
Browning the beef wicks in flavor, so don’t skip this step!
Adding wine adds depth to the sauce, but the broth works just as well.
This dish freezes well for meal prep.
