Slow Cooker Korean Beef

Ingredients:
2 lbs beef chuck or brisket, cut into chunks
½ cup soy sauce
¼ cup brown sugar
2 tbsp sesame oil
4 cloves garlic, minced
1 tbsp ginger, grated
1 tbsp rice vinegar
½ tsp red pepper flakes (optional)
1 cup beef broth
2 tbsp cornstarch + 2 tbsp water (for thickening)
2 green onions, sliced (for garnish)
Sesame seeds (for garnish)
Instructions:
1.Place beef in the slow cooker.
2.In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, red pepper flakes, and beef broth. Pour over the beef.
3.Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until tender.
4.Mix cornstarch and water, then stir into the slow cooker. Cook for another 15 minutes until the sauce thickens.
5.Serve over rice, garnished with green onions and sesame seeds. Enjoy!
