Slow Cooker Chicken and Rice

 

Ingredients:
– 1 cup long-grain white rice
– 4 boneless, skinless chicken breasts
– 2 cups chicken broth
– 1 onion, diced
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1 cup frozen peas and carrots
– Salt and pepper to taste
– 2 tablespoons olive oil

Instructions:
1. Start by drizzling the olive oil into the bottom of your slow cooker.
2. Place the chicken breasts in the cooker and season them with garlic powder, paprika, salt, and pepper, ensuring they’re evenly coated.
3. Add the diced onion on top of the chicken to infuse flavor.
4. Pour the chicken broth over the chicken and onions, then sprinkle the rice on top.
5. Finally, stir everything gently to combine while keeping the rice mostly on top; don’t mix too much to keep the layers.
6. Cover and cook on low for about 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
7. About 30 minutes before serving, add the frozen peas and carrots, giving it a gentle stir to combine.
8. When cooking is complete, shred the chicken right in the slow cooker and mix it into the rice for a delicious, hearty dish.
