Seared Filet Mignon with Caramelized Potatoes Recipe

Ingredients
For the Filet Mignon:
2 filet mignon steaks (6-8 oz each) 🥩
Salt and freshly ground black pepper 🧂
1 tbsp olive oil 🫒
1 tbsp unsalted butter 🧈
1 sprig fresh rosemary 🌿
For the Caramelized Potatoes:
2 medium potatoes, peeled and cubed 🥔
1 tbsp olive oil 🫒
2 tbsp unsalted butter 🧈
1 tbsp honey or sugar 🍯
Salt and freshly ground black pepper 🧂
Instructions
Prepare the Filet Mignon:
Season the filet mignon generously with salt and pepper. Let them rest at room temperature for 20 minutes.
Caramelize the Potatoes:
Heat olive oil in a nonstick skillet over medium heat. Add cubed potatoes and sauté until golden and crispy on the outside, about 5-7 minutes.
Reduce heat to low, add butter and honey (or sugar), and toss until the potatoes are glazed and caramelized. Season with salt and pepper. Keep warm.
Sear the Filet Mignon:
Heat a cast-iron skillet over medium-high heat. Add olive oil and let it shimmer.
Sear each steak for 2-3 minutes per side, until a golden crust forms. Add butter and rosemary to the skillet.
Tilt the skillet and spoon the melted butter over the steaks for enhanced flavor.
For medium-rare, cook the steaks for an additional 2-3 minutes. Adjust based on your preferred doneness.
Rest the Steaks:
Remove steaks from the skillet and let them rest for 5 minutes, loosely covered with foil.
Plate and Serve:
Arrange the caramelized potatoes on a plate. Place the filet mignon on top or alongside.
Drizzle any pan juices over the steak and garnish with fresh rosemary.
