Savory Roasted Chicken & Veggies A One-Pan Wonder

Ingredients:😋
Chicken: 4 bone-in, skin-on chicken thighs 2 tbsp olive oil 1 tsp paprika 1 tsp garlic powder ½ tsp dried thyme ½ tsp salt ½ tsp black pepper
Vegetables: 2 cups baby potatoes (halved) 1 cup baby carrots 1 red onion (cut into wedges) 1 cup broccoli florets 2 tbsp olive oil 1 tsp Italian seasoning ½ tsp salt ½ tsp black pepper

Preheat Oven: Heat to 400°F (200°C). Line a large baking sheet with parchment paper.
Season Chicken: In a bowl, mix olive oil, paprika, garlic powder, thyme, salt, and pepper. Rub the mixture over the chicken thighs.
Prepare Veggies: Toss potatoes, carrots, onion, and broccoli in olive oil, Italian seasoning, salt, and pepper. Spread on the baking sheet.😋😋
