Savory Classic Reuben Bake
Ingredients:
6 cups rye bread, cubed
1 lb sliced corned beef, chopped
2 cups sauerkraut, drained
2 cups Swiss cheese, shredded
1/2 cup Thousand Island dressing
1/2 cup mayonnaise
1/4 cup Dijon mustard
4 large eggs
1 1/2 cups milk
Instructions:
Preheat oven to 350°F. Grease a 9×13-inch baking dish.
Spread half of the cubed rye bread evenly in the baking dish.
Layer with chopped corned beef, sauerkraut, and 1 cup of shredded Swiss cheese.
Top with remaining cubed rye bread.
In a bowl, mix Thousand Island dressing, mayonnaise, Dijon mustard, eggs, and milk until well combined. Pour evenly over the bread mixture.
Sprinkle the remaining 1 cup of shredded Swiss cheese on top.
Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until the top is golden and bubbly.
Let the bake cool for a few minutes before serving.
Notes:
For a crispy top, broil for the last 2-3 minutes of baking.
