Roasted Chicken with Vegetables

 

🍂 Ingredients:

🏵️ For the chicken:
6 chicken pieces (drumsticks or thighs)
2 tbsp olive oil
3 garlic cloves, minced
1 tsp salt
½ tsp black pepper
½ tsp paprika
Juice of ½ lemon
1 tsp thyme or rosemary

🏵️ For the Vegetables:
2 carrots, chopped into cubes
1 head of broccoli, cut into florets
1 tbsp olive oil
1 garlic clove, minced
A pinch of salt & pepper

🍂 Instructions:

1.Preparing the Chicken:
🔸 In a bowl, mix olive oil, garlic, salt, pepper, paprika, lemon juice, and thyme.
🔸Coat the chicken pieces well with the marinade and let them marinate for at least 30 minutes.
🔸 Place the chicken on a greased baking tray and roast in a preheated oven at 200°C (400°F) for 35-40 minutes until golden brown.

2.Preparing the Vegetables:
🔸Boil the carrots in salted water for 5 minutes, then drain.
🔸Steam the broccoli for 4 minutes to keep its bright color and fresh taste.
🔸In a pan, heat olive oil, add garlic, then toss in the carrots and broccoli. Stir-fry for 2 minutes with salt and pepper.

3.Serving:
🔸Garnish with fresh herbs and serve immediately. Enjoy!
