Oatmeal Cream Pies

 

Ingredients:
– 1 cup granulated sugar
– 1 ½ cups quick oats
– ½ cup all-purpose flour
– ½ cup unsalted butter, softened
– 1 large egg
– 1 tsp baking soda
– 1 tsp cinnamon
– ½ tsp salt
– 1 cup powdered sugar
– 1 tsp vanilla extract
– ½ cup vegetable shortening

Instructions:
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Beat in the egg until fully incorporated.

4. In another bowl, mix the oats, flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, stirring until combined.

5. Drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.

6. Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden brown. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

7. While the pies are cooling, prepare the cream filling. In a bowl, mix the vegetable shortening, powdered sugar, and vanilla extract until smooth.

8. Once the cookies are completely cool, spread a generous amount of the cream filling on the flat side of one cookie and top it with another cookie to create a sandwich.

9. Enjoy your delicious oatmeal cream pies with a glass of milk or your favorite beverage!
