Oatmeal Cream Pies

Ingredients:
– 1 cup brown sugar
– 1/2 cup unsweetened applesauce
– 1 teaspoon vanilla extract
– 1 cup all-purpose flour
– 1/2 teaspoon baking soda
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 1 cup rolled oats
– 1/2 cup shortening
– 1 cup powdered sugar
– 1/4 cup milk
– 1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, beat the shortening and brown sugar together until creamy.
3. Add in the applesauce and vanilla extract, mixing well.
4. In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Gradually stir the dry ingredients into the wet mixture until well incorporated.
5. Fold in the rolled oats until evenly distributed.
6. Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
9. While the cookies cool, prepare the cream filling. In a medium bowl, blend the powdered sugar, milk, and vanilla extract until smooth and creamy.
10. Once cooled, spread a generous amount of cream filling on the flat side of one cookie and top it with another cookie, flat side down. Press gently to sandwich them together.
11. Repeat with the remaining cookies until all are filled.
