Mexican Street Corn Dip Recipe

Ingredients:
– 1 cup mayonnaise
– 1 teaspoon chili powder
– 2 cups corn (fresh or canned)
– 1/2 cup crumbled feta cheese
– 1/2 cup sour cream
– 1/4 cup chopped fresh cilantro
– Juice of 1 lime
– Salt to taste
– 1/2 cup diced red onion (optional)
– 1 jalapeño, diced (optional)
Instructions:
1. Begin by heating a large skillet over medium-high heat. If using fresh corn, add the corn to the skillet and cook until it’s nicely charred, about 5-7 minutes. If using canned corn, skip this step.
2. In a large mixing bowl, combine the mayonnaise, sour cream, lime juice, and chili powder. Stir until well mixed.
3. Fold in the charred corn (or canned corn), crumbled feta cheese, chopped cilantro, and diced red onion. If you like a bit of heat, add the diced jalapeño as well.
4. Season with salt to taste, mixing everything evenly.
5. Transfer the dip to a serving bowl and garnish with extra cilantro and a sprinkle of chili powder on top for that extra flair.
