Ingredients

Dry Ingredients:

1 cup (160g) sweet rice flour (glutinous rice flour)
1 cup (200g) granulated sugar
2 tablespoons matcha powder
1 teaspoon baking powder
¼ teaspoon salt
Wet Ingredients:

½ cup (120ml) coconut milk
¼ cup (60ml) vegetable oil
2 large eggs, at room temperature
1 teaspoon vanilla extract
Optional Add-ins:

½ cup white chocolate chips or chopped white chocolate
¼ cup chopped nuts (e.g., macadamia, almonds)
Topping:

Powdered sugar, for dusting
Additional matcha powder, for dusting
Instructions
Prepare the Batter

Preheat the oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) baking pan and line it with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk together the sweet rice flour, granulated sugar, matcha powder, baking powder, and salt until well combined.
In a separate bowl, whisk together the coconut milk, vegetable oil, eggs, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms. If using, fold in the white chocolate chips and chopped nuts until evenly distributed.
Bake

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
Bake for 30–35 minutes, or until the edges are set and a toothpick inserted into the center comes out clean.
Cool and Serve

Allow the brownies to cool completely in the pan on a wire rack. Once cooled, use the parchment overhang to lift them out of the pan.
Dust the top with powdered sugar and a light sprinkle of matcha powder before slicing into squares.
Serve at room temperature and enjoy the unique chewy texture and earthy flavor.
