📝 Ingredients:
Salmon: 2 fillets, juice of 1 lemon, fresh dill and parsley (chopped), 1 clove garlic (minced), 1 tbsp olive oil, salt, pepper
Quinoa Bowl: 1 cup cooked quinoa, 1 avocado (sliced), 1/2 cucumber (sliced), 1/2 cup cherry tomatoes (halved), 1 cup baby spinach, chopped parsley, red onion (optional)
Dressing: 2 tbsp lemon juice, 1 tbsp olive oil, 1 tsp honey, 1 clove garlic (minced), chopped parsley
🔧 Steps:
Cook Quinoa: Rinse quinoa and bring to a boil. Simmer for 15 minutes, then fluff with a fork.
Prepare Salmon: Combine lemon juice, dill, parsley, garlic, olive oil, salt, and pepper. Brush over salmon and grill for 4-5 minutes per side.
Make Dressing: In a small bowl, whisk together lemon juice, olive oil, honey, garlic, and parsley.
Assemble Bowl: Layer the quinoa, avocado, cucumber, tomatoes, spinach, and grilled salmon. Drizzle with dressing.
