Keto Tuna Cucumber Cups

For the Cucumber Cups:
2 large cucumbers, sliced into 1-inch thick rounds π₯
1 can (6β7 oz) tuna, drained π
2 tbsp mayonnaise
1 tsp Dijon mustard
1/4 tsp garlic powder
1 tbsp fresh dill or parsley, chopped πΏ
1 tbsp lemon juice π
1 tbsp red onion, finely chopped π§
Salt and freshly ground black pepper to taste π§
For Garnish:
Additional fresh dill or parsley πΏ

Prepare the Cucumber Cups:
Slice the cucumbers into 1-inch thick rounds. Use a melon baller or small spoon to carefully scoop out the center of each round, leaving a small base to hold the filling. Set aside.
Make the Tuna Salad:
In a mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, garlic powder, dill or parsley, lemon juice, red onion, salt, and pepper. Mix well until creamy and evenly combined.
Assemble the Cups:
Spoon the tuna salad into the hollowed-out cucumber cups, filling each generously.
Garnish and Serve:
Garnish each cucumber cup with a small sprig of dill or a sprinkle of lemon zest for added freshness. Serve immediately or refrigerate until ready to enjoy.
