Instant Pot Rotisserie Chicken

 

Ingredients:
– 1 whole chicken (3 to 4 pounds)
– 1 tablespoon olive oil
– 1 teaspoon paprika
– 2 teaspoons garlic powder
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon dried thyme
– 1 cup chicken broth
– Fresh herbs for garnish (optional)

Instructions:
1. Start by prepping your chicken. Pat it dry with paper towels to remove excess moisture.
2. In a small bowl, combine olive oil, paprika, garlic powder, onion powder, salt, black pepper, and thyme to create a flavorful rub.
3. Rub the spice mixture all over the chicken, including inside the cavity, for maximum flavor.
4. Pour the chicken broth into the bottom of your Instant Pot. This will create steam and keep your chicken moist.
5. Place the chicken on the trivet inside the Instant Pot. Ensure it’s elevated above the broth for even cooking.
6. Close the lid and set the valve to sealing. Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on high pressure for 6 minutes per pound of chicken (18 to 24 minutes total).
7. Once cooking is complete, allow a natural pressure release for 10 to 15 minutes before manually releasing the remaining pressure.
8. Carefully remove the chicken from the pot and place it on a cutting board. Let it rest for 10 minutes before carving.
9. Garnish with fresh herbs if desired and serve with your favorite sides.
