HOT HONEY SHRIMP AND QUINOA BOWL

 

❗Ingredients:

For the Shrimp:
1 lb shrimp, peeled and deveined
Salt and black pepper, to taste
1 tbsp olive oil
3 tbsp hot honey (store-bought or mix 2 tbsp honey with 1/2 tsp chili flakes)
1 tbsp soy sauce
2 cloves garlic, minced

For the Quinoa:
1 cup quinoa
2 cups water or chicken broth
Pinch of salt

For the Bowl:
1 cup arugula or spinach
1/2 cup cucumber slices
1/2 cup shredded carrots
1 avocado, sliced
1/2 cup roasted corn

Optional Garnishes:
Chopped cilantro or parsley
Red chili flakes
Lemon or lime wedges

❗Instructions:

1️⃣ Cook the Quinoa:
Rinse quinoa under cold water.
In a medium saucepan, combine quinoa, water (or chicken broth), and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

2️⃣ Prepare the Hot Honey Glaze:
In a small bowl, whisk together hot honey, soy sauce, and minced garlic.

3️⃣ Cook the Shrimp:
Heat olive oil in a skillet over medium heat. Season shrimp with salt and pepper.
Add shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
Reduce heat, pour the hot honey glaze over the shrimp, and toss to coat evenly. Let the glaze thicken slightly, about 1-2 minutes.

4️⃣ Prepare the Veggies:
Wash and prep the arugula or spinach, cucumber slices, shredded carrots, avocado, and roasted corn.

5️⃣ Assemble the Bowls:
Divide the quinoa among serving bowls. Top with shrimp, arugula or spinach, cucumber, carrots, avocado, and roasted corn.

6️⃣ Garnish and Serve:
Sprinkle with cilantro or parsley and a pinch of red chili flakes. Add a lemon or lime wedge for a fresh zing. Serve warm and enjoy!
