Honey garlic chicken and roasted sweet potatoes

Ingredients 😋
▪️4 chicken breasts
▪️3 medium sweet potatoes (cut into pieces)
▪️3 tablespoons of olive oil (divided)
▪️3 garlic cloves (minced)
▪️1/4 cup of honey
▪️2 tablespoons soy sauce
▪️1 teaspoon of Dijon mustard
▪️1/2 teaspoon of dried thyme
▪️Fresh thyme (for garnish)
▪️Salt and pepper (to taste)
Directions 😋
1️⃣ Preheat the oven: Set the oven to 400°F (200°C).
2️⃣ Roast the sweet potatoes: Toss sweet potato slices with 1 tablespoon of olive oil, salt and pepper. Arrange on a baking sheet and bake for 20-25 minutes, turning halfway through, until golden brown.
3️⃣ Prepare the chicken: Season chicken breasts with salt, pepper and dried thyme. Heat 2 tablespoons of olive oil in a skillet over medium heat. Chicken sear for 4-5 minutes per side until golden brown. Remove and set aside.
4️⃣ Make the sauce: In the same pan, add garlic and simmer for 1 minute. Stir in honey, soy sauce and Dijon mustard. Simmer for 2-3 minutes until slightly thickens
5️⃣ Combine and bake: Return chicken to the pan and spoon the sauce over each piece. Reduce heat to low, cover and bake for 5 to 7 minutes until chicken is cooked through (165°F/74°C internal temperature).
6️⃣ Servings: Place the chicken with roasted sweet potatoes. Drizzle the remaining sauce on the dish and garnish with fresh thyme.
