Homemade Sweet Chilli Sauce

Ingredients:
– 1/2 cup rice vinegar
– 1/2 cup water
– 1/2 cup sugar (white or brown)
– 3 tbsp fish sauce (or soy sauce for a vegetarian option)
– 2-3 tbsp chili flakes (adjust to your spice preference)
– 2 cloves garlic, minced
– 1 tbsp cornstarch
– 2 tbsp water (for cornstarch slurry)
– 1/2 tsp salt
Directions:
1. In a medium saucepan, mix together the rice
vinegar, water, sugar, fish sauce, chili flakes, minced garlic, and salt.
Heat over medium heat, stirring until the sugar dissolves and the mixture simmers.
2. In a small bowl, combine the cornstarch with 2 tablespoons of water to create a slurry.
3. Gradually add the cornstarch slurry to the simmering sauce while stirring continuously.
Cook for an additional 2-3 minutes until the sauce thickens to your liking.
4. Remove the saucepan from the heat and allow the sauce to cool.
5. Once cooled, pour the sweet chilli sauce into a clean jar or bottle for storage.
6. Use the sauce right away as a dip for spring rolls, grilled meats, or roasted vegetables, or keep it in the refrigerator for up to 2-3 weeks.
