Hearty Vegetable Beef Soup Delight

 

Ingredients:
– 1 pound beef stew meat, cubed
– 4 cups beef broth
– 2 cups carrots, chopped
– 1 cup potatoes, diced
– 1 cup green beans, chopped
– 1 onion, diced
– 2 cloves garlic, minced
– 1 can diced tomatoes (14 oz)
– 2 tablespoons olive oil
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup corn (optional)
– 1 bay leaf

Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the beef stew meat and brown it on all sides for about 5 to 7 minutes.

2. Add the diced onion and minced garlic to the pot. Cook until the onions are translucent, around 3 to 4 minutes.

3. Pour in the beef broth and stir in the diced tomatoes, carrots, potatoes, green beans, thyme, salt, pepper, and bay leaf.

4. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 1 hour, stirring occasionally.

5. If desired, add corn in the last 10 minutes of cooking for added sweetness and nutrition.

6. Taste and adjust seasoning if necessary. Remove the bay leaf before serving.

7. Serve hot with crusty bread or crackers for a complete meal!
