Hearty Sausage and Veggie Stew

Ingredients:
– 3 cups diced carrots
– 2 tablespoons olive oil
– 1 pound Italian sausage, sliced
– 1 can (14.5 oz) diced tomatoes
– 1 cup chopped celery
– 4 cups vegetable broth
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 3 cups chopped kale
– Salt and pepper to taste
– 1 medium onion, diced
– 2 cups diced potatoes
Instructions:
1. In a large pot, heat the olive oil over medium heat.
2. Add the sliced Italian sausage and cook until browned, about 5-7 minutes.
3. Toss in the diced onions, carrots, and celery. Sauté until the vegetables soften, around 5 minutes.
4. Stir in the diced potatoes and cook for another 3 minutes.
5. Pour in the vegetable broth and add the canned tomatoes, dried oregano, garlic powder, onion powder, salt, and pepper. Bring the mixture to a boil.
6. Once boiling, reduce the heat and let it simmer for 15-20 minutes, until the potatoes are tender.
7. Finally, add the chopped kale and cook for another 5 minutes until wilted. Adjust seasoning as desired.
