Grilled Pork Chops with Apricot-Chipotle Glaze

 

Ingredients:
• 4 bone-in pork chops (1 inch thick)
• 1/2 cup apricot preserves 🍑
• 2 tablespoons chipotle peppers in adobo sauce, minced 🌶️
• 2 tablespoons apple cider vinegar 🍎
• 1 tablespoon honey 🍯
• 2 cloves garlic, minced 🧄
• 1 tablespoon olive oil 🫒
• Salt and black pepper, to taste 🧂
• Fresh cilantro or parsley, for garnish 🌿
Directions:
1. Preheat the grill to medium-high heat (around 400°F/200°C).
2. In a small saucepan over medium heat, combine the apricot preserves, chipotle peppers, apple cider vinegar, honey, and garlic. Stir and simmer for 5 minutes, allowing the flavors to meld. Remove from heat.
3. Rub the pork chops with olive oil, then season both sides generously with salt and pepper.
4. Place the pork chops on the grill and cook for 5-6 minutes per side or until they reach an internal temperature of 145°F (63°C). Brush with the apricot-chipotle glaze during the last few minutes of cooking, flipping once for even coverage.
5. Remove the chops from the grill and let them rest for 5 minutes.
6. Garnish with fresh cilantro or parsley and serve with the remaining glaze on the side.
