Grilled Fish with Shrimp and Mashed Potatoes
Ingredients:
1 large fish fillet (salmon, halibut, or your choice)
8 medium-sized shrimp, peeled and deveined
4 large potatoes, peeled and chopped
3 tablespoons butter
1/4 cup milk (or cream)
2 tablespoons olive oil
2 garlic cloves, minced
1/2 lemon, juiced
1 teaspoon paprika
Salt and black pepper to taste
Fresh parsley, chopped
For the Sauce:
1/2 cup chicken or fish stock
2 tablespoons butter
1 tablespoon flour
1 teaspoon chili flakes (optional)
Instructions:
1. Prepare the Mashed Potatoes:
Boil the potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.
2. Season and Cook the Fish:
Rub the fish fillet with olive oil, garlic, lemon juice, paprika, salt, and pepper. Preheat a grill pan and cook the fish on medium heat for 4-5 minutes on each side until golden and cooked through.
3. Cook the Shrimp:
Season the shrimp with salt, pepper, and a dash of paprika. Grill or sauté in a hot pan with a drizzle of olive oil for 2-3 minutes per side until pink and opaque.
4. Make the Sauce:
In a small pan, melt butter and stir in the flour. Cook for 1 minute, then slowly add the stock, stirring constantly to avoid lumps. Let it simmer until thickened. Add chili flakes if desired.
5. Assemble the Dish:
Place a scoop of mashed potatoes in the center of a plate. Top with the grilled fish fillet and arrange the shrimp on the side. Drizzle the sauce over the fish and garnish with fresh parsley.
