GRILLED CHICKEN CAPRESE SALAD BOWL
❗Ingredients:
For the Grilled Chicken:
2 large chicken breasts
2 cloves garlic, minced
1 tsp Italian seasoning
2 tbsp olive oil
Salt & pepper to taste
For the Salad Bowl:
4 cups mixed greens (arugula, spinach, or romaine)
1 cup cherry tomatoes, halved
1/2 cup fresh mozzarella balls (or sliced mozzarella)
1/4 cup fresh basil leaves
1 avocado, sliced (optional)
For the Dressing:
2 tbsp olive oil
1 tbsp fresh lemon juice
Salt & pepper to taste
For the Topping:
2 tbsp balsamic glaze (store-bought or homemade)
Instructions
1️⃣ Marinate and Grill the Chicken:
In a small bowl, combine olive oil, garlic, Italian seasoning, salt, and pepper. Coat the chicken breasts in the marinade and let sit for 15-30 minutes.
Heat a grill or skillet over medium heat. Cook the chicken for 4-5 minutes per side or until fully cooked. Let it rest for 5 minutes before slicing.

In a large bowl, toss together the mixed greens, cherry tomatoes, mozzarella balls, and fresh basil leaves. Add avocado slices for extra creaminess if desired.
3️⃣ Make the Dressing:
In a small jar, whisk together olive oil, lemon juice, salt, and pepper until emulsified. Drizzle over the salad and toss gently.

5️⃣ Drizzle and Garnish:
