Grilled BBQ Beef Ribs

Ingredients (Serves 4)
For the Ribs:
4 lbs (1.8 kg) beef back ribs
1 tablespoon olive oil
Salt and black pepper to taste
For the Dry Rub:
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper (optional, for heat)
For the BBQ Sauce:
1/2 cup ketchup
1/4 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon mustard
1/2 teaspoon smoked paprika
Instructions
Prepare the Ribs:
Pat the ribs dry with a paper towel and remove the membrane from the back of the ribs for better seasoning and tenderness.
Apply the Dry Rub:
In a small bowl, mix all the dry rub ingredients.
Rub olive oil over the ribs, then generously coat them with the dry rub. Let the ribs sit for 30 minutes to absorb the flavors.
Preheat the Grill:
Set your grill for indirect cooking at medium heat (about 300°F/150°C). If using charcoal, place the coals to one side of the grill.
Grill the Ribs:
Place the ribs bone-side down on the cooler side of the grill. Cover and cook for 2–2.5 hours, maintaining a steady temperature. Turn the ribs occasionally for even cooking.
Make the BBQ Sauce:
While the ribs are grilling, combine all BBQ sauce ingredients in a saucepan. Simmer over medium heat for 10 minutes, stirring occasionally. Set aside.
Caramelize with BBQ Sauce:
During the last 15–20 minutes of grilling, brush the ribs generously with BBQ sauce and move them to the hotter side of the grill. Allow the sauce to caramelize, flipping and basting frequently for a sticky, flavorful glaze.
Serve:
Remove the ribs from the grill and let them rest for 5 minutes. Slice between the bones and serve with extra BBQ sauce on the side.
