Ingredients:
– Fresh herbs (thyme and rosemary)
– Olive oil
– Heavy cream
– Filet mignon steaks
– Red wine (Merlot or Cabernet Sauvignon)

Instructions:
1. Start by preheating your oven to 400 degrees Fahrenheit (200 degrees Celsius).

2. Season the filet mignon steaks generously with salt and pepper on both sides.

3. In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once hot, add the steaks and sear for about 3-4 minutes on each side until a beautiful golden crust forms.

10. Once cooked, remove the skillet from the oven (be careful, it’ll be hot!) and let the steaks rest for a few minutes before serving. Drizzle with the velvety sauce and garnish with more herbs if you like. Enjoy!
