Garlic Herb Roasted Rack of Lamb

 

Ingredients:

1 rack of lamb (about 1.5 lbs, frenched)
4 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon fresh mint leaves, chopped (optional)
1 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste
Instructions:

Prepare the Lamb:

Preheat the oven to 450°F (230°C). Line a roasting pan with foil or parchment paper.
Pat the rack of lamb dry with paper towels. Season generously with salt and pepper.
Make the Herb Mixture:

In a small bowl, mix minced garlic, olive oil, rosemary, thyme, mint (if using), and Dijon mustard until well combined.
Coat the Lamb:

Rub the garlic herb mixture evenly over the rack of lamb, focusing on the meaty side. Let it marinate for 30 minutes at room temperature or up to 4 hours in the refrigerator.

Place the lamb in the prepared roasting pan, meaty side up. Roast for 15-20 minutes for medium-rare (internal temperature of 130°F) or longer for desired doneness.

Remove from the oven and let the lamb rest for 10 minutes, loosely covered with foil. This helps the juices redistribute.
Serve:
