Garlic Herb Roasted Potatoes, Carrots, and Zucchini

 

Ingredients:

– 4 medium potatoes, cut into chunks
– 3 large carrots, sliced
– 2 medium zucchinis, sliced
– 3 tablespoons olive oil
– 4 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

Directions:

1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss the potatoes, carrots, and zucchini with olive oil, garlic, thyme, rosemary, salt, and pepper.
3. Spread the vegetables evenly on a baking sheet.
4. Roast in the oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and lightly browned.
5. Remove from the oven and garnish with fresh parsley before serving.
