GARLIC HERB GRILLED LOBSTER

INGREDIENTS
4 lobster tails (about 6 ounces each)
1/4 cup unsalted butter, melted
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
1/2 teaspoon smoked paprika
Juice of 1/2 lemon
Salt and black pepper, to taste

INSTRUCTIONS
Prepare the Lobster Tails:
Using kitchen scissors, cut through the top shell of each lobster tail lengthwise, stopping at the base. Gently pull the shell apart and lift the meat, resting it on top of the shell for presentation.
Make the Garlic Herb Butter:
In a small bowl, combine melted butter, olive oil, garlic, parsley, thyme, rosemary, smoked paprika, lemon juice, salt, and black pepper. Mix well.
Preheat the Grill:
Preheat your grill to medium-high heat (around 375–400°F). Lightly oil the grates to prevent sticking.
Grill the Lobster Tails:
Brush the lobster meat generously with the garlic herb butter. Place the lobster tails shell-side down on the grill. Cover and cook for 8-10 minutes, basting occasionally with more butter, until the meat is opaque and slightly charred around the edges.
Serve:
Remove the lobster tails from the grill and drizzle with any remaining garlic herb butter. Serve immediately with lemon wedges on the side.
