Garlic Butter Honey BBQ Chicken Tacos

Ingredients:
For the chicken:
1 lb boneless, skinless chicken breasts or thighs
2 tbsp olive oil
Salt and pepper to taste
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder (optional)
For the garlic butter sauce:
4 tbsp unsalted butter
4 cloves garlic, minced
2 tbsp honey
1/4 cup BBQ sauce (choose your favorite)
For assembling the tacos:
8 small soft tortillas (flour or corn)
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup red onion, thinly sliced
1/4 cup shredded cheese (cheddar or mozzarella)
Fresh cilantro leaves (optional)
Lime wedges (for serving)
Instructions:
Prepare the chicken:
Season the chicken breasts or thighs with salt, pepper, paprika, garlic powder, onion powder, and chili powder (if using).
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side until fully cooked and golden brown. Remove from the skillet and let it rest for a few minutes before slicing it into thin strips.
Make the garlic butter honey BBQ sauce:
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Stir in the honey and BBQ sauce, and bring the mixture to a simmer for about 2 minutes, allowing the sauce to thicken slightly.
Combine the chicken and sauce:
Add the sliced chicken into the skillet with the garlic butter honey BBQ sauce. Toss to coat the chicken in the sauce and cook for another 2-3 minutes until everything is well combined and heated through.
Assemble the tacos:
Warm the tortillas in a dry skillet or microwave for a few seconds.
Divide the garlic butter honey BBQ chicken evenly between the tortillas.
Top with shredded lettuce, diced tomatoes, red onion, and shredded cheese.
Garnish with fresh cilantro and a squeeze of lime juice for extra flavor.
