Fried Rice withChicken

 

Ingredients :

– 2 cups cooked and cooled rice (ideally long-grain rice)

– 2 chicken breasts, cut into small pieces

– 2 eggs, beaten

– 1 red bell pepper, diced

– 1 medium onion, thinly sliced

– 2 garlic cloves, minced

– 1 carrot, finely diced

– 1 cup frozen peas

– 3 tablespoons soy sauce

– 1 tablespoon oyster sauce (optional)

– 2 tablespoons vegetable oil

– Salt and ground black pepper to taste

– Fresh chives or coriander, for garnish

Instructions:

1. Heat 1 tablespoon vegetable oil in a large frying pan or wok over
wok over medium-high heat. Add chicken pieces seasoned with salt and pepper.
