Festive Cranberry Dijon Pork Loin Roast

Ingredients:
– 2 pounds pork loin
– 1 cup fresh cranberries
– 1/4 cup Dijon mustard
– 1/4 cup honey
– 1 tablespoon olive oil
– 2 teaspoons dried thyme
– Salt and pepper to taste
– 1 onion, sliced
– 2 cloves garlic, minced

Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a small bowl, mix together the Dijon mustard, honey, olive oil, dried thyme, salt, and pepper to create a flavorful glaze.
3. Rub this glaze all over the pork loin, making sure to cover it evenly.
4. In a roasting pan, arrange the sliced onions and minced garlic as a bed for the pork.
5. Place the pork loin on top of the onions and garlic in the roasting pan.
6. Scatter the fresh cranberries around the pork in the pan.
7. Roast in the preheated oven for about 1 hour, or until the internal temperature of the pork reaches 145°F (63°C).
