Easy Mediterranean Tilapia

 

Ingredients:
– Fresh tilapia fillets
– Olive oil
– Cherry tomatoes, halved
– Fresh parsley, chopped
– Garlic cloves, minced
– Lemon juice
– Sea salt
– Black pepper
– Kalamata olives, pitted and sliced
– Feta cheese, crumbled
– Capers

Instructions:
1. Preheat your oven to 400°F (200°C).
2. Rinse and pat dry the tilapia fillets with paper towels. Place them on a lined baking sheet.
3. Drizzle olive oil over the tilapia, ensuring it’s coated evenly.
4. In a bowl, mix together the cherry tomatoes, garlic, olives, capers, lemon juice, sea salt, and black pepper.
5. Spread the tomato mixture generously over the tilapia fillets.
6. Crumble feta cheese on top of the fillets for a delicious tang.
7. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
8. Remove from the oven, garnish with chopped parsley, and serve with lemon wedges for extra zing!
