Ingredients: :
🥚 3 eggs
🍬 250 g (1¼ cup) sugar
🌿 8 g (2 tsp) cinnamon
🌰 250 g (1¾ cup) whole almonds
🌾 260 g (2 cups) all-purpose flour
🌰 100 g (1 cup) sliced almonds (for garnish)
Instructions: :
1️⃣ Preheat your oven to 180°C (350°F). In a bowl, whisk the eggs and sugar for 20 minutes until the mixture becomes light and fluffy. Add the cinnamon, crushed almonds, and flour, then mix until a smooth dough forms.
2️⃣ Shape the dough into two logs and place them on a baking sheet lined with parchment paper. Sprinkle the logs with sliced almonds and bake for 30 minutes until lightly golden.
3️⃣ Allow the logs to cool slightly, then slice them into 1 cm (½-inch) thick pieces. For extra crunch, bake the slices for an additional 5 minutes on each side (optional).
4️⃣ Cool the biscuits on a wire rack before serving.
