Crockpot Marry Me Chicken

Ingredients:
4 boneless, skinless chicken breasts
1 cup heavy cream
1 cup chicken broth
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes (optional, for a bit of heat)
½ teaspoon salt (or to taste)
½ teaspoon black pepper
¼ cup sun-dried tomatoes, chopped
2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening)
Fresh basil or parsley, chopped (for garnish)
Instructions:
1. Prepare the Chicken:
Season chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
2. Layer in the Crockpot:
Place the chicken in the bottom of your slow cooker. Sprinkle the sun-dried tomatoes on top.
3. Make the Sauce:
In a medium bowl, whisk together the heavy cream, chicken broth, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Pour this mixture over the chicken.
4. Cook:
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and cooked through.
5. Optional Thickening:
If you want the sauce thicker, mix the cornstarch with water to create a slurry. Stir it into the sauce about 30 minutes before serving and let it cook until the sauce thickens.
6. Serve:
Garnish with fresh basil or parsley. Serve over pasta, rice, or mashed potatoes to soak up the creamy sauce.
