Crispy Fish & Cheesy Loaded Wedges Delight

 

Ingredients:
– 2 large potatoes
– 1 cup grated cheese (cheddar or mozzarella)
– 2 fillets of white fish (like cod or tilapia)
– 1 cup breadcrumbs
– 1/2 cup all-purpose flour
– 1 egg
– 1 tsp garlic powder
– 1 tsp paprika
– Salt and pepper to taste
– Olive oil or cooking spray
– Fresh parsley for garnish (optional)

Instructions:
1. Preheat your oven to 425°F (220°C).
2. Wash and cut the potatoes into wedges. Toss them in a bowl with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
3. Spread the seasoned wedges on a parchment-lined baking tray and bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
4. While the wedges are baking, prepare the fish. Set up a breading station with three plates: one with flour, one with beaten egg, and one with breadcrumbs mixed with salt and pepper.
5. Dredge each fish fillet in flour, dip in the egg, and coat with breadcrumbs until well covered.
6. Heat a skillet over medium heat and add a bit of olive oil. Fry the breaded fish for about 3-4 minutes on each side until golden and cooked through. Remove and drain on paper towels.
7. Once the wedges are done, sprinkle a generous amount of cheese over them and return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
8. Serve the cheesy loaded wedges alongside the crispy fish, garnishing with fresh parsley if desired.
