CRISPY FETA AND HERB ROASTED CHICKEN.

 

INGREDIENTS :
1 whole chicken (approx. 1.5 kg) or 4 chicken thighs πŸ”
3 tablespoons of olive oil 3
3 garlic cloves, finely chopped ados
Juice of 1 lemon πŸ‹
1 teaspoon of fresh thyme 🌿
1 teaspoon of fresh rosemary 🌿
Salt and pepper to taste Sal
1 Cup Shredded Feta Cheese πŸ§€
1/4 cup grated bread (optional, for larger texture)
2 tablespoons of fresh parsley, chopped 🌿

INSTRUCTIONS:
Prepare the chicken:
Preheat the oven to 200Β°C (400Β°F).
Wash and dry the chicken. If you’re using a whole chicken, tie the legs with cooking thread for a uniform cooking.
In a small bowl, mix olive oil, minced garlic, lemon juice, thyme, rosemary, salt and pepper.
Marinate and Season:
Rub the olive oil mixture all over the chicken, making sure you cover the skin well and underneath it.
Prepare the feta cheese:
In a separate bowl, mix shredded feta with grated bread (if you use it) and fresh parsley.
Baking:
Place chicken in a baking tray and cook for 40-50 minutes if using thighs, or 1 hour and 20 minutes for a whole chicken depending on weight.
For the last 15 minutes of cooking, sprinkle the feta mixture over the chicken so that it is golden and crispy.
Serve:
Remove the chicken from the oven and let it rest for 5-10 minutes before cutting it.
Served hot with roasted potatoes, fresh salad or rice.
