Crispy Calamari with Spicy Aioli

 

Ingredients:
• 🦑 1 lb calamari (rings and tentacles)
• 1 cup all-purpose flour
• 1/2 cup cornstarch
• 1 tsp smoked paprika
• 1 tsp garlic powder
• 1/2 tsp cayenne pepper
• Salt and black pepper to taste
• 1 cup buttermilk
• Vegetable oil for frying
Spicy Aioli:
• 1/2 cup mayonnaise
• 1 tbsp sriracha
• 1 tsp lemon juice 🍋
• 1 small garlic clove, finely minced
Directions:
1. In a bowl, mix mayonnaise, sriracha, lemon juice, and minced garlic to create the spicy aioli. Cover and refrigerate until serving.
2. Rinse the calamari under cold water, then pat dry with paper towels. Soak in buttermilk for 30 minutes to tenderize.
3. In a shallow dish, combine flour, cornstarch, smoked paprika, garlic powder, cayenne, salt, and pepper.
4. Heat vegetable oil in a deep skillet or pot to 375°F (190°C).
5. Remove calamari from buttermilk, shaking off excess, then dredge in the flour mixture. Ensure each piece is well-coated.
6. Fry in small batches for 2-3 minutes, or until golden and crispy. Avoid overcrowding the pan.
7. Transfer to a plate lined with paper towels to drain excess oil.
8. Serve immediately with spicy aioli and a sprinkle of fresh parsley for garnish.
