Creamy Strawberry Delight Crepes

Ingredients:
– 1 cup all-purpose flour
– 2 cups fresh strawberries, sliced
– 3 eggs
– 1 cup milk
– 2 tablespoons sugar
– 1 tablespoon vanilla extract
– 1 cup heavy cream
– 1 tablespoon powdered sugar
– A pinch of salt
– Butter, for cooking
Instructions:
1. In a mixing bowl, whisk together the flour, eggs, milk, sugar, and a pinch of salt until smooth and well combined. Let the batter rest for about 20 minutes.
2. In another bowl, whip the heavy cream and powdered sugar until soft peaks form. Set aside.
3. Heat a non-stick skillet over medium heat and add a small pat of butter. Once melted, pour in a ladle of crepe batter, swirling to cover the bottom of the pan.
4. Cook for about 2-3 minutes or until the edges lift easily. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, stacking the cooked crepes on a plate.
5. To assemble, take a crepe and spread a spoonful of the whipped cream in the center. Top with sliced strawberries, and fold the crepe over.
6. Serve warm, drizzled with extra whipped cream and garnished with more strawberries if desired.
