Creamy Smoked Salmon Puffs
For 8 leaflets

Ingredients :
1 roll of puff pastry
150 g of smoked salmon
100 g of fresh cheese (type of mascarpone, ricotta or spread cheese)
2 tablespoons of sour cream
1 tablespoon of lemon juice
8 tomates cerises
A few chives or dill stalks
1 egg yolk (for gold)
Salt and pepper….
Preparation:
Prepare the leaflet fund:
Preheat your oven to 200 ยฐC (rotating heat).
Roll out the puff pastry and cut 8 circles with a coin holder. With a smaller coin holder, cut rings in the center of 8 other circles to form the edges.
Overlay a ring on each full circle to form “fly-auctions”. Decorate the edges with egg yolk for a beautiful gold finish.
Cooking of puff pastries:
Arrange the flyovers on a plate covered with sulfurized paper.
Bake them in the oven for 12 to 15 minutes, until well puffed and golden brown.
Let cool before filling.
Prepare the cream cheese:
In a bowl, whip up the cool cheese, sour cream and lemon juice. Season with a pinch of salt, pepper and a pinch of chopped chives.
Assemble the leaflets:
Fill each puff with a tablespoon of cream cheese.
Add a string of smoked salmon rolled in rosace in the center. Arrange a cherry tomato on top for a touch of color and freshness.
Decoration:
Add a dill leaf or chive strand for an elegant finish.
Tips: You can add a sweet touch by incorporating a spoonful of honey into the cream cheese. For more flavor, sprinkle sesame or poppy seed puffs before using them
pour in. These puffs can be prepared ahead of time and topped right before serving to keep them fresh.
