Ingredients:
• 4 medium-sized potatoes, peeled and diced
• 1 medium onion, finely chopped
• 2 carrots, peeled and diced
• 3 celery stalks, diced
• 4 cups chicken or vegetable broth
• 2 cups milk (or cream for extra richness)
• 2 tablespoons butter
• 2 tablespoons all-purpose flour
• 1 teaspoon garlic powder
• 1/2 teaspoon paprika
• Salt and pepper to taste
• Fresh parsley, chopped (optional, for garnish)
Directions:
1️⃣ In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, cooking until softened, about 5 minutes.
2️⃣ Stir in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the broth, ensuring there are no lumps.
3️⃣ Add the diced potatoes, garlic powder, and paprika. Bring to a boil, then reduce the heat and let simmer for 20 minutes, or until the potatoes are tender.
4️⃣ Stir in the milk (or cream) and season with salt and pepper. Simmer for an additional 5 minutes, stirring occasionally.
5️⃣ Using a potato masher, gently mash some of the potatoes in the pot to thicken the soup, leaving chunks for texture.
