Creamy Garlic Mushroom Salmon

Perfectly seared salmon fillets, topped with a rich, garlicky mushroom sauce infused with fresh spinach—every bite is pure luxury!
Ingredients:
For the Salmon:
4 salmon fillets
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
For the Creamy Garlic Mushroom Sauce:
2 tbsp butter
1 cup mushrooms (sliced)
3 cloves garlic (minced)
1 cup fresh spinach (chopped)
1/2 cup heavy cream
1/2 cup chicken or vegetable broth
1/4 cup Parmesan cheese (grated)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1 tbsp fresh parsley (chopped, for garnish)
Instructions:
1️⃣ Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Season salmon with salt, pepper, and paprika. Sear for 4 minutes per side until golden brown and cooked through. Remove and set aside.
2️⃣ Sauté the Mushrooms: In the same pan, melt butter and sauté mushrooms until golden brown (about 5 minutes). Add garlic and cook for 1 more minute.
3️⃣ Make the Creamy Sauce: Pour in broth and let it simmer for 2 minutes. Add heavy cream, Parmesan cheese, salt, pepper, and thyme. Stir well, then add chopped spinach. Let simmer for 3-4 minutes until thickened.
4️⃣ Combine & Serve: Return the salmon fillets to the pan, spoon the sauce over them, and let simmer for 2 minutes. Garnish with fresh parsley and serve hot!
